A vibrant salad that combines crisp romaine, hearty black beans, sweet corn, and a zesty dressing for a refreshing delight.

Ingredients

  • 2 cups romaine lettuce
  • 1 cup cooked black beans
  • 1 cup corn kernels
  • 1 medium tomato, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, diced
  • 1 avocado, sliced
  • 2 tablespoons cilantro, chopped
  • 1/4 cup shredded cheddar cheese
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Chop and rinse the romaine lettuce and place it in a large mixing bowl.
  2. Add black beans, corn kernels, diced tomato, red bell pepper, and red onion to the bowl.
  3. In a separate small bowl, whisk together lime juice, olive oil, chili powder, ground cumin, salt, and black pepper until well combined.
  4. Pour the dressing over the salad ingredients and gently toss to coat everything evenly.
  5. Top with sliced avocado, chopped cilantro, and shredded cheddar cheese.
  6. Serve immediately for the best flavor and texture.

Notes

Store leftover salad components separately in airtight containers in the fridge. Use lime juice on sliced avocado to prevent browning.
