A hearty and comforting stir fry with sausage and cabbage, perfect for busy weeknights.

  • 1 lb (450 g) sausage (Italian, smoked, or chicken sausage, sliced)
  • 4 cups green cabbage, chopped (about half a medium head)
  • 1 medium onion, thinly sliced
  • 1 bell pepper, sliced (any color)
  • 3 cloves garlic, minced
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons olive oil
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (adjust to taste)

Instructions

  1. Prepare the Ingredients: Slice the sausage into bite-sized pieces. Chop the green cabbage into roughly 1-inch pieces. Thinly slice the onion and bell pepper. Mince the garlic cloves carefully to release full flavor.
  2. Heat the Skillet: Heat 2 tablespoons of olive oil in a large skillet or wok over medium-high heat.
  3. Sauté the Sausage: Add the sausage pieces to the skillet and cook for 5 to 7 minutes until they are nicely browned and cooked through, stirring occasionally.
  4. Add the Vegetables: Add the sliced onion and bell pepper to the skillet with the sausage. Cook for 3 to 4 minutes, stirring occasionally, until the vegetables soften but still have some bite.
  5. Infuse with Garlic: Stir in the minced garlic and cook for an additional minute to infuse the dish with its aroma without burning.
  6. Combine with Cabbage: Add the chopped cabbage to the skillet, stirring to combine. Cook for 5 to 7 minutes until the cabbage is tender but maintains a slight crunch, stirring frequently to prevent sticking.
  7. Season the Dish: Return the cooked sausage to the skillet if it was set aside. Add 3 tablespoons soy sauce, 1/2 teaspoon black pepper, and 1/4 teaspoon red pepper flakes. Stir well to coat all ingredients evenly.
  8. Heat Through and Serve: Continue cooking for another 2 to 3 minutes to heat everything through and blend the flavors. Serve the stir fry warm for a satisfying meal.

Notes

Pairs beautifully with steamed rice or quinoa. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
