A hearty and easy pasta dish that brings warmth and joy to any gathering, featuring fettuccine, Italian sausage, and vibrant vegetables in a creamy tomato sauce.

  • 1 lb Italian sausage
  • 12 oz fettuccine
  • 1 bell pepper, chopped
  • 8 oz mushrooms, sliced
  • 1 onion, chopped
  • 24 oz tomato sauce
  • 1/2 cup Romano cheese, grated
  • 1/2 tsp crushed red pepper flakes

Instructions

  1. Boil water in a large pot and season it generously with salt. Add the fettuccine and cook according to the package instructions until al dente. Drain and set aside.
  2. Heat a splash of olive oil in a large skillet over medium heat. Add the chopped onions, bell peppers, and mushrooms. Sauté until they soften and become fragrant, about 5-7 minutes.
  3. Add the crumbled Italian sausage to the skillet. Cook, stirring occasionally, until the sausage is browned and cooked through, about 6-8 minutes.
  4. Pour in the tomato sauce, stirring well to combine. Bring to a gentle simmer and let it cook for about 5 minutes.
  5. Toss in the cooked fettuccine, mixing gently until the pasta is thoroughly coated with the sauce and sausage mixture.
  6. Serve hot, topped with freshly grated Romano cheese and a sprinkle of crushed red pepper flakes.

Notes

For a lighter version, consider swapping ground turkey for the Italian sausage. Any pasta shape can work as a substitute.
