Southern-Style Seafood Stuffed Potatoes

A comforting dish filled with seafood and cheesy goodness, perfect for family gatherings.

Ingredients

  • 4 large baking potatoes
  • 1 cup cooked shrimp, chopped
  • 1 cup cooked crab meat
  • 1/2 cup cream cheese
  • 1/4 cup sour cream
  • 1/4 cup milk
  • 1 cup shredded cheese (like cheddar)
  • 2 tablespoons Cajun seasoning
  • 1/2 cup green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and prick the potatoes with a fork. Bake them for about 45-60 minutes or until tender.
  3. Once baked, let the potatoes cool for a few minutes, then slice them in half lengthwise and scoop out some of the flesh into a mixing bowl.
  4. Add the shrimp, crab meat, cream cheese, sour cream, milk, half of the shredded cheese, Cajun seasoning, green onions, salt, and pepper to the bowl and mix until combined.
  5. Spoon the seafood mixture back into the potato skins and top with the remaining shredded cheese.
  6. Place the stuffed potatoes back on a baking sheet and bake for another 15-20 minutes until the cheese is melted and bubbly.
  7. Serve warm and enjoy the delicious flavors of the South!
