A delicious breakfast that blends crispy bacon, tender potatoes, vibrant vegetables, and perfectly cooked eggs, all baked together for a hearty family meal.

Ingredients

  • 2 large potatoes, diced
  • 1 bell pepper, diced
  • 1 onion, diced
  • 4 slices of bacon, chopped
  • 6 eggs
  • Olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced potatoes, bell pepper, onion, and chopped bacon together with olive oil, salt, and pepper.
  3. Bake for 20-25 minutes until the potatoes are tender and edges are crispy.
  4. Create six small wells in the mixture using a spoon.
  5. Add an egg into each well you’ve created.
  6. Garnish with fresh parsley and serve immediately.

Notes

Make sure to cut potatoes into uniform pieces for even cooking. You can use a variety of vegetables to enhance the dish.
