A nostalgic and hearty breakfast hash featuring crispy potatoes, bell peppers, and eggs, all cooked on a single sheet pan.

Ingredients

  • 2 large potatoes, diced
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 6 strips of bacon, chopped
  • 4 large eggs
  • Salt and pepper to taste
  • Olive oil
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced potatoes, bell pepper, onion, and bacon with olive oil, salt, and pepper on a large sheet pan.
  3. Spread the mixture out in a single layer.
  4. Bake for 20-25 minutes or until the potatoes are tender and the bacon is crisp.
  5. Remove the pan and make four wells in the hash with a spatula.
  6. Crack an egg into each well.
  7. Return the pan to the oven and bake for an additional 10-15 minutes until the eggs are set.
  8. Garnish with fresh herbs if desired, and serve hot.

Notes

Feel free to substitute bacon with turkey bacon for a lighter option. Add spinach or kale for extra nutrition.
