A simple, flavorful sheet pan chicken dish with roasted vegetables that the whole family will love.

Ingredients

  • 4 chicken thighs or breasts
  • 2 cups of mixed vegetables (like broccoli, bell peppers, and carrots)
  • 3 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix together olive oil, garlic powder, paprika, salt, and pepper in a large bowl.
  3. Add chicken to the bowl and coat it well with the mixture.
  4. Arrange the chicken on a sheet pan and surround it with mixed vegetables.
  5. Roast in the preheated oven for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
  6. Garnish with fresh herbs if desired and serve.

Notes

Don’t crowd the pan for even roasting, and feel free to experiment with different vegetables.
