A simple yet vibrant dish featuring chicken or shrimp with bell peppers, baked to perfection on one pan.

  • 2 bell peppers (sliced)
  • 1 onion (sliced)
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Tortillas for serving
  • Optional toppings: sour cream, salsa, cheese

Instructions

  1. Preheat your oven to 400°F (200°C) to get it nice and hot for crispy veggies and tender protein.
  2. In a large bowl, toss the chicken or shrimp with the sliced bell peppers and onions. Drizzle the olive oil over the mixture, followed by the chili powder, cumin, garlic powder, salt, and pepper. Make sure everything is evenly coated with the spices.
  3. Transfer the seasoned mixture onto a sheet pan, spreading it out in a single layer. This ensures that everything cooks evenly and gets those beautiful caramelized edges.
  4. Bake in the preheated oven for 20-25 minutes. Keep an eye on it – you’ll know it’s ready when the chicken is cooked through and the veggies are roasted and tender.
