Ingredients

  • 4 chicken thighs or breasts
  • 1 cup cherry tomatoes
  • 1 red onion, sliced
  • 1 bell pepper, sliced
  • 1/2 cup Kalamata olives
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the olive oil, minced garlic, oregano, salt, pepper, and lemon juice in a large bowl.
  3. Add the chicken and toss to coat in the marinade.
  4. Arrange the marinated chicken on a sheet pan with cherry tomatoes, red onion, bell pepper, and olives.
  5. Bake for 25-30 minutes until the chicken reaches 165°F (75°C) and vegetables are tender.
  6. Serve hot, drizzled with extra lemon if desired.
