A one-pan wonder featuring succulent chicken and vibrant Mediterranean vegetables, perfect for a quick and delightful meal.

  • 4 chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, sliced
  • 1 cup red onion, sliced
  • 1/2 cup Kalamata olives, pitted
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine olive oil, minced garlic, dried oregano, salt, and pepper in a large bowl.
  3. Add the chicken breasts to the bowl and toss to coat them thoroughly in the marinade.
  4. Arrange the marinated chicken breasts on a sheet pan with halved cherry tomatoes, sliced bell peppers, red onion, and Kalamata olives.
  5. Bake for 25-30 minutes or until the chicken is cooked through and vegetables are tender.
  6. Garnish with fresh parsley before serving.

Notes

For even cooking, consider flattening the chicken breasts slightly before marinating. This dish reheats beautifully.
