Sheet Pan Quesadillas

Quick and customizable sheet pan quesadillas loaded with cheese and your choice of fillings, perfect for gatherings or a weeknight dinner.

Ingredients

  • 8 flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 cup cooked chicken (shredded) or vegetables
  • 1 cup black beans (drained and rinsed)
  • 1 bell pepper (sliced)
  • 1 small onion (sliced)
  • 2 teaspoons taco seasoning
  • Cooking spray or olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spray a baking sheet with cooking spray or lightly coat with olive oil.
  3. Place 4 tortillas on the baking sheet.
  4. Layer half of the cheese, chicken or vegetables, black beans, bell pepper, onion, and taco seasoning on top of the tortillas.
  5. Sprinkle with the remaining cheese and cover with the remaining tortillas.
  6. Spray the top of the quesadillas with cooking spray.
  7. Bake for 15-20 minutes until the tortillas are golden brown and crispy.
  8. Cut into wedges and serve with your favorite accompaniments, like salsa, avocado, or sour cream.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
