A vibrant and flavor-packed sheet pan version of the classic shrimp fajitas, perfect for busy weeknights.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Tortillas for serving
  • Lime wedges for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix the shrimp, bell pepper, onion, olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper together in a large bowl.
  3. Spread the mixture in a single layer on a sheet pan.
  4. Bake for 10-12 minutes until the shrimp are pink and cooked through.
  5. Serve with warm tortillas and lime wedges.

Notes

For added spice, consider including sliced jalapeños or chili flakes. Use frozen shrimp for convenience.
