Tantalizingly flavorful slow-cooked beef barbacoa, perfect for tacos or burritos.

Ingredients

  • 3 pounds beef chuck roast
  • 1/4 cup lime juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 1 tablespoon garlic powder
  • 2 teaspoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 12 chipotle peppers in adobo sauce (optional)
  • 1 cup beef broth

Instructions

  1. Place the beef in the slow cooker.
  2. Mix the marinade by whisking together lime juice, apple cider vinegar, cumin, chili powder, garlic powder, oregano, salt, and black pepper.
  3. Pour the marinade over the beef, ensuring it’s well coated.
  4. Add the chopped onion and minced garlic over the meat, and optionally toss in chipotle peppers.
  5. Pour in the beef broth.
  6. Cover and cook on low for about 8 hours.
  7. Shred the beef to your desired texture and serve.

Notes

Serve with tortillas, cilantro, diced onions, and lime. Leftovers can be stored in the refrigerator for 3-4 days.
