A comforting and hearty beef roast cooked slowly to perfection, infused with herbs and spices, perfect for family dinners.

  • 3 to 4 pounds beef roast (chuck or brisket)
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 3 carrots, chopped
  • 3 potatoes, chopped
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat olive oil in a skillet over medium heat. Brown the beef roast on all sides, then transfer to the slow cooker.
  2. Add the chopped onion, minced garlic, carrots, and potatoes around the roast in the slow cooker.
  3. Mix together the beef broth, Worcestershire sauce, thyme, salt, and pepper. Pour this flavorful mixture over the roast and vegetables.
  4. Cover and cook on low for 8-10 hours or high for 4-5 hours, until the beef is tender.
  5. Remove the roast from the slow cooker, slice, and serve with the vegetables.
