A comforting dish featuring sweet corn, crispy bacon, and melted cheddar cheese, perfect for family gatherings or cozy dinners.

  • 6 slices bacon
  • 4 cups corn kernels (fresh or frozen)
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Cook the bacon in a skillet over medium heat until crisp, then transfer to a paper towel–lined plate to drain.
  2. Chop the cooled bacon into bite-sized pieces and reserve the bacon fat in the skillet.
  3. Place the chopped bacon, bacon fat, corn, onion, garlic, butter, garlic powder, onion powder, salt, pepper, and heavy cream into the slow cooker and stir to combine.
  4. Cover and cook on low for 2 to 3 hours, stirring once halfway through cooking to incorporate the flavors.
  5. Stir in the shredded cheddar cheese about 30 minutes before serving until melted and evenly distributed.
  6. Garnish with chopped fresh parsley before serving.

Notes

For richer flavor, use smoked bacon. Can be made vegetarian by replacing bacon with sautéed mushrooms or smoked paprika.
