A comforting slow-cooked corned beef dish, tender and packed with flavor, perfect for family gatherings or cozy nights.

  • 34 lbs corned beef brisket (halal-certified)
  • 1 medium onion, quartered
  • 4 cloves garlic, minced
  • 45 medium carrots, cut into large chunks
  • 45 medium potatoes, peeled and quartered
  • 2 cups beef broth (halal)
  • 1 tablespoon mustard seeds
  • 1 teaspoon black peppercorns
  • 1 tablespoon whole coriander seeds
  • 23 pieces bay leaves
  • Salt (to taste)

Instructions

  1. Prepare the Vegetables: Peel and chop the potatoes and carrots. Quarter the onion and mince the garlic.
  2. Season the Brisket: Rinse the corned beef brisket under cold water to remove excess brine. Pat it dry and place it on a cutting board.
  3. Layer the Ingredients: Place the quartered onion at the bottom of the slow cooker, followed by the minced garlic, then spread the carrots and potatoes on top.
  4. Add the Corned Beef: Carefully transfer the corned beef brisket to the slow cooker among the vegetables.
  5. Create the Broth Mixture: Combine beef broth, mustard seeds, black peppercorns, coriander seeds, bay leaves, and salt in a separate bowl, then pour over the brisket and vegetables.
  6. Set and Forget: Cover the slow cooker and set to low heat for 8 hours.
  7. Serve with Love: After cooking, remove the corned beef, let it rest before slicing, and serve with vegetables and broth.
