A comforting and hearty stew made with tender chicken thighs, vegetables, and white wine, perfect for chilly evenings.

  • 1 pound boneless skinless chicken thighs, cut into chunks
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 stalks celery, sliced
  • 2 medium potatoes, peeled and cubed
  • 1 cup dry white wine
  • 2 cups chicken broth
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 2 tablespoons cold water
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a skillet over medium-high heat and sear chicken pieces until golden brown on all sides.
  2. Transfer the seared chicken into the slow cooker. Add in the chopped onion, minced garlic, sliced carrots, sliced celery, and cubed potatoes.
  3. Pour in the dry white wine and chicken broth. Follow up with dried thyme, bay leaves, salt, and black pepper.
  4. Cover and cook on low for 6–8 hours or on high for 3–4 hours, until both chicken and vegetables are tender.
  5. Whisk together the flour and cold water to form a slurry, and stir this mixture into the stew to thicken.
  6. Continue cooking for the remaining time, stirring once to ensure an even consistency, then remove bay leaves and sprinkle parsley before serving.

Notes

Searing the chicken enhances flavor; you can swap in different vegetables or add red pepper flakes for a spicy kick.
