A rich and creamy chowder made with smoked salmon and tender potatoes, perfect for a comforting meal.

Ingredients

  • 2 medium potatoes, diced
  • 1 cup smoked salmon, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs (dill or parsley) for garnish

Instructions

  1. Heat the olive oil in a pot over medium heat. Add the chopped onion and garlic, sauté until translucent.
  2. Add the diced potatoes and broth, bring to a boil and then reduce heat. Simmer until potatoes are tender, about 15 minutes.
  3. Stir in the smoked salmon and heavy cream, season with salt and pepper.
  4. Allow to heat through for an additional 5 minutes.
  5. Serve hot, garnished with fresh herbs.

Notes

Pairs beautifully with crusty bread or a fresh side salad. Leftover chowder can be stored in an airtight container in the refrigerator for up to 3 days.
