Delicious cheesecake bars inspired by the classic campfire treat, featuring a creamy layer over a graham cracker crust.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup mini marshmallows
  • 1 cup chocolate chips
  • 1/2 cup crushed graham crackers (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a bowl, mix together the graham cracker crumbs, 1/4 cup sugar, and melted butter until fully combined. Press the mixture firmly into the bottom of the prepared pan to form a solid crust.
  3. In a large mixing bowl, beat the cream cheese and 1 cup of sugar until smooth and creamy. Add the vanilla extract and eggs one at a time, mixing well after each addition until the batter is uniform.
  4. Pour the rich cream cheese mixture over the crumb crust in the pan. Spread it evenly with a spatula for a beautiful layer.
  5. Sprinkle the mini marshmallows and chocolate chips on top of the cheesecake mixture, ensuring an even distribution for delightful bites of chocolate and fluffiness.
  6. Bake in the preheated oven for 30-35 minutes, or until the center is set but slightly jiggly.
  7. Remove from the oven and let the dish cool at room temperature.
  8. Refrigerate the bars for at least 2 hours (or overnight) before cutting them into squares.
  9. Before serving, top the bars with a sprinkle of crushed graham crackers for that extra crunch.
