  • 4 bone-in, skin-on chicken thighs
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • Fresh parsley, chopped, for garnish

Instructions

  1. Season the chicken thighs generously with salt and pepper on both sides.
  2. Sear the chicken in a skillet with olive oil over medium-high heat until golden brown.
  3. Sauté the chopped onion in the same skillet until translucent and golden.
  4. Add the minced garlic and cook until fragrant.
  5. Deglaze the skillet with chicken broth, scraping the bottom.
  6. Return the chicken to the skillet, skin side up, and simmer in the broth.
  7. Thicken the gravy by whisking heavy cream and flour, then stir it in.
  8. Garnish with parsley before serving.

Notes

For deeper flavor, marinate the chicken overnight. Serve with mashed potatoes or crusty bread.
