Instructions

  1. Combine the warm water, yeast, and sugar in a bowl. Let it sit for about 5 minutes until frothy.
  2. Add the flour and salt to the yeast mixture, mixing until a dough forms.
  3. Knead the dough for about 5 minutes until smooth and elastic.
  4. Let the dough rise in a warm place for about an hour, until it has doubled in size.
  5. Preheat the oven to 425°F (220°C) to get it ready for baking.
  6. Bring a large pot of water to a gentle boil and add the baking soda carefully, watching for any fizz.
  7. Divide the dough into small pieces, rolling each into a rope. Twist into pretzel shapes or keep them as simple bites.
  8. Boil each pretzel in the baking soda water for about 30 seconds to create that signature pretzel crust.
  9. Place the pretzels on a baking sheet, brush with the beaten egg, and generously sprinkle with kosher salt.
  10. Bake for 12-15 minutes until golden brown and irresistible.
