Delightful sour cream scones with a soft texture, perfect for breakfast or afternoon tea.

  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash, optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. Stir in the sour cream and vanilla extract until just combined.
  5. Turn the dough onto a floured surface and knead gently a few times.
  6. Pat the dough into a circle about 1 inch thick.
  7. Cut into wedges or use a round cutter to cut out scones.
  8. Place on the prepared baking sheet. If desired, brush the tops with beaten egg for a glossy finish.
  9. Bake for 12-15 minutes or until golden brown.
  10. Let cool slightly before serving.

Serve warm with butter, jam, or clotted cream. Pairs well with coffee or tea.
