A vibrant salad bursting with zesty Cajun flavors, featuring grilled shrimp, fresh vegetables, and a tangy dressing.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the grill to medium-high heat.
  2. Combine the shrimp, Cajun seasoning, 1 tablespoon olive oil, and lime juice in a bowl. Toss until coated.
  3. Thread the shrimp onto skewers or place them in a grill basket.
  4. Grill the shrimp for 2 to 3 minutes per side until opaque and slightly charred.
  5. Combine the romaine, cherry tomatoes, avocado, red onion, and cilantro in a large bowl.
  6. Whisk together the remaining olive oil, red wine vinegar, salt, and black pepper in a small bowl.
  7. Pour the dressing over the salad and toss gently.
  8. Divide the salad onto plates and top with the grilled shrimp. Serve immediately.

Notes

Best enjoyed fresh but can be stored in an airtight container in the fridge for up to 2 days.
