  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 stalks celery, diced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Chopped green onions for garnish
  • Crumbled bacon (optional)

Instructions

  1. Sauté the onion, garlic, bell pepper, and celery over medium heat for about 5 minutes until softened.
  2. Add the diced potatoes, Cajun seasoning, smoked paprika, and broth. Bring to a boil, then reduce heat and simmer for 20 minutes or until potatoes are tender.
  3. Blend the soup using an immersion blender until smooth, leaving some chunks for texture.
  4. Stir in the heavy cream and heat through for an additional 5 minutes. Adjust seasoning with salt and pepper.
  5. Serve hot, garnished with green onions and crumbled bacon if desired.
