A warm and satisfying breakfast sandwich featuring fluffy eggs, sharp cheddar cheese, and a spicy chipotle mayo.

Ingredients

  • 2 large eggs
  • 2 slices of bread (your choice)
  • 2 slices of sharp cheddar cheese
  • 2 tablespoons of mayonnaise
  • 1 tablespoon of chipotle sauce or minced chipotle peppers
  • Salt and pepper to taste
  • Butter or oil for frying

Instructions

  1. Mix the chipotle mayo by combining mayonnaise with the chipotle sauce in a small bowl. Set aside.
  2. Heat a skillet over medium heat and add butter or oil.
  3. Crack the eggs into the skillet and cook to your desired level of doneness, seasoning with salt and pepper.
  4. Toast the bread slices while the eggs are cooking.
  5. Spread the chipotle mayo on one side of each slice of bread.
  6. Add the cooked eggs and top with cheddar cheese.
  7. Close the sandwich and enjoy your delicious breakfast!

Notes
