  • 200 g fresh ramen noodles
  • 200 g flank steak
  • 3 cups chicken stock
  • 2 tablespoons gochujang
  • 1 tablespoon gochugaru
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon cornstarch
  • 1 tablespoon cold water
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame oil
  • 1 stalk green onion, sliced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 teaspoon sesame seeds
  • 2 sprigs cilantro

Instructions

  1. Slice and season the beef with salt, black pepper, and half of the sesame oil.
  2. Grill the beef in a grill pan over medium-high heat for 2 minutes per side until medium, then set aside to rest.
  3. Sauté garlic and ginger in remaining sesame oil for 1 minute until fragrant.
  4. Stir in gochujang, gochugaru, soy sauce, and sugar, cooking for 1 minute before adding chicken stock to a simmer.
  5. Mix cornstarch with cold water to form a slurry, whisking it into the simmering broth until thickened.
  6. Stir in heavy cream and adjust seasoning with salt and pepper to taste.
  7. Cook ramen noodles according to package instructions, then drain and divide into serving bowls.
  8. Pour the creamy spicy broth over the noodles, topping with grilled beef slices, green onion, sesame seeds, and cilantro.

Notes

This ramen pairs well with pickled vegetables and a side salad with sesame dressing. Perfect for cozy weeknight dinners.
