A vibrant and refreshing salad that combines baby spinach, sweet strawberries, crunchy almonds, and creamy feta, dressed with a light vinaigrette.

  • 1 pint strawberries
  • 1/4 cup sliced almonds
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash the spinach by rinsing it under cold water and spinning or patting it dry.
  2. Prepare the strawberries by washing them, removing the stems, and slicing them thinly.
  3. Whisk together the olive oil, balsamic vinegar, honey, salt, and pepper in a small bowl until well blended.
  4. Assemble the salad by placing the spinach and sliced strawberries in a large bowl and drizzling with the dressing.
  5. Toss the salad gently to coat all ingredients evenly.
  6. Add the sliced almonds and crumbled feta cheese on top before serving.

Notes

For maximum flavor, use freshly picked strawberries. Toasting the almonds enhances their crunch.
