A delicious stuffed chicken breast filled with creamy spinach and cheese, perfect for family dinners.

  • 4 boneless, skinless chicken breasts
  • 8 oz (225 g) cream cheese, softened
  • 2 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1/2 cup mozzarella cheese, shredded
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1/2 cup mozzarella cheese, shredded (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the softened cream cheese, chopped spinach, minced garlic, and half of the mozzarella cheese in a mixing bowl. Season with salt and pepper.
  3. Slice a pocket into each chicken breast, fill with the spinach mixture, and secure with toothpicks if needed.
  4. Mix breadcrumbs with salt and pepper, then dip each breast in olive oil and coat with the breadcrumb mixture.
  5. Place the stuffed chicken breasts in a greased baking dish and sprinkle with remaining mozzarella cheese.
  6. Bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
  7. Let the chicken rest for a few minutes before serving.

Notes

For an extra crunch, consider mixing panko breadcrumbs with regular breadcrumbs.
