A delicious and versatile Spinach Mushroom Quiche perfect for brunch or a cozy dinner.

  • 1 pie crust
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 1 cup shredded cheese (cheddar or Swiss)
  • 4 large eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the sliced mushrooms until softened, about 5 minutes.
  3. Wilt the fresh spinach in the skillet until reduced in volume, about 2-3 minutes.
  4. Whisk together the eggs, milk, salt, pepper, and nutmeg until combined.
  5. Stir in the sautéed mushroom and spinach mixture, followed by the shredded cheese.
  6. Pour the mixture into the prepared pie crust.
  7. Bake for 30-35 minutes or until set and golden brown.
  8. Cool for a few minutes before slicing into wedges.
