A comforting and versatile quiche filled with fresh spinach and savory mushrooms, perfect for any gathering.

Ingredients

  • 1 pie crust (store-bought or homemade)
  • 1 cup fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 cup shredded cheese (cheddar or Swiss)
  • 4 eggs
  • 1 cup milk
  • Salt and pepper to taste
  • 1/2 onion, diced (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté the sliced mushrooms and diced onion (if using) over medium heat until softened, about 5-7 minutes.
  3. Add the chopped spinach and cook until wilted, about 2-3 minutes.
  4. Whisk together the eggs, milk, salt, and pepper until frothy.
  5. Spread the sautéed vegetables evenly over the pie crust.
  6. Sprinkle the shredded cheese over the vegetables.
  7. Pour the egg mixture over the vegetables and cheese.
  8. Bake in the preheated oven for 30-35 minutes, until set and golden.
  9. Let the quiche cool for a few minutes before slicing.
