A comforting and simple dish made with fresh spinach, cherry tomatoes, and pasta, perfect for busy weeknights.

Ingredients

  • 12 ounces pasta (such as penne or fusilli)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 pint cherry tomatoes, halved
  • 5 ounces fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil, for garnish (optional)

Instructions

  1. Boil the pasta according to package instructions in a large pot of salted boiling water until al dente. Once cooked, drain the pasta, reserving 1/2 cup of the pasta water.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Sauté the minced garlic and red pepper flakes, if using, for about 1 minute or until fragrant.
  4. Cook the halved cherry tomatoes in the skillet for about 5-7 minutes, stirring occasionally, until soft and blistered.
  5. Wilt the spinach in the skillet with the tomatoes for an additional 2-3 minutes.
  6. Combine the cooked pasta with the vegetable mixture.
  7. Achieve desired sauce consistency by gradually adding the reserved pasta water.
  8. Incorporate the grated Parmesan cheese until melted and the pasta is coated.
  9. Season with salt and pepper to taste.
  10. Garnish with fresh basil if desired before serving.

Notes

Pasta water is key for achieving the perfect sauce consistency. Adjust the red pepper flakes to your desired spice level.
