Delightful soft and chewy blondies with sprinkles, white chocolate, and a hint of lemon zest, perfect for spring celebrations.

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 cup pastel spring sprinkles
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat the oven to 350°F and line an 8×8 inch baking pan with parchment paper.
  2. Whisk together the all-purpose flour, baking powder, and salt in a bowl. Set aside.
  3. Mix the cooled melted butter, granulated sugar, and brown sugar until smooth.
  4. Incorporate the eggs one at a time, whisking after each addition. Stir in the vanilla extract and lemon zest.
  5. Combine the dry ingredients into the wet mixture until just combined.
  6. Fold in the pastel sprinkles and white chocolate chips.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 18 to 22 minutes or until edges are golden and a toothpick comes out with a few moist crumbs.
  9. Cool completely in the pan before lifting out and cutting into squares.
