  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup milk
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • Powdered sugar for glazing

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Cream together the sugar and softened butter until light and fluffy.
  3. Beat in the eggs one at a time, then add the milk, lemon zest, lemon juice, and vanilla extract.
  4. Mix the all-purpose flour, baking powder, and salt in another bowl.
  5. Combine the dry ingredients with the wet mixture until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack and glazing with powdered sugar if desired.
