A delightful Lemon Loaf that is moist, tender, and perfectly sweetened with a zesty lemon flavor and a lovely glaze.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sour cream
  • 1/4 cup vegetable oil
  • 3 large eggs
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix the all-purpose flour, baking powder, baking soda, and salt.
  3. Blend the granulated sugar, vegetable oil, and eggs until smooth.
  4. Mix in the sour cream, lemon zest, lemon juice, and vanilla extract.
  5. Add your dry ingredients to the wet mixture until just combined.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes.
  7. Let the loaf cool completely before glazing.
  8. Mix the powdered sugar with lemon juice and drizzle it over the cooled loaf.

Notes

For a sweeter loaf, feel free to increase the sugar in the batter. Can substitute sour cream with plain yogurt.
