Ingredients

Scale
  • 1 pound flank or skirt steak
  • ¼ cup lime juice (freshly squeezed)
  • ¼ cup olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or agave syrup
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • Salt and pepper, to taste

Instructions

  1. Prepare the Marinade: In a mixing bowl, combine freshly squeezed lime juice, high-quality olive oil, soy sauce, and honey or agave syrup.
  2. Add the Flavor Boosters: Next, add minced garlic, cumin, smoked paprika, chili powder, salt, and pepper to the marinade. Stir well until everything is nicely blended.
  3. Marinade the Steak: Place flank or skirt steak in a ziplock bag or a shallow dish and pour the marinade over it. Seal tightly and let marinate in the refrigerator for at least 30 minutes.
  4. Heat the Grill or Skillet: When ready to cook, heat your grill or skillet over medium-high heat.
  5. Grill or Sauté the Steak: Remove the steak from the marinade and grill or sauté for about 3–4 minutes on each side for medium-rare.
  6. Rest the Steak: Once cooked to your liking, remove the steak from the heat and allow to rest for 5 minutes.
  7. Slice and Serve: Slice the steak against the grain and serve with grilled peppers and onions in warm tortillas.

Notes

Quality matters: using high-quality flank or skirt steak will greatly enhance taste and tenderness. Marinate longer for deeper flavor.
