Instructions

  1. Prepare the crepe batter by whisking together flour, eggs, milk, melted butter, sugar, and salt until smooth. Let the batter rest for 30 minutes.
  2. Heat a non-stick skillet over medium heat and pour in a small amount of batter, tilting to spread evenly. Cook until the edges lift and the bottom is lightly browned, about 1-2 minutes.
  3. Flip the crepe and cook for another minute until golden. Repeat with remaining batter, stacking the cooked crepes on a plate.
  4. Sweeten sliced strawberries with sugar and let sit for 10 minutes to create a syrup.
  5. Assemble each crepe with sugared strawberries and whipped cream before folding or rolling to serve.

Notes

For added flavor, consider adding a splash of vanilla extract to the batter. Leftover crepes can be stored in an airtight container for up to 2 days.
