A simple yet deeply satisfying Strawberry Shortcake that’s perfect for any occasion.

Ingredients

Scale
  • 1 pound fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Whipped cream for serving

Instructions

  1. Macerate the Strawberries: In a bowl, combine sliced strawberries and sugar. Let sit for about 30 minutes to macerate.
  2. Preheat the Oven: Preheat the oven to 425°F (220°C).
  3. Prepare the Dry Ingredients: In a large bowl, whisk together flour, baking powder, and salt.
  4. Cut in the Butter: Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  5. Combine Wet Ingredients: Stir in heavy cream and vanilla extract until just combined.
  6. Shape the Dough: Turn the dough onto a floured surface and gently knead a few times. Roll out to about 1-inch thick and cut into rounds.
  7. Bake the Shortcakes: Place the rounds on a baking sheet and bake for 12-15 minutes until lightly golden.
  8. Assemble the Delight: Cut the shortcakes in half, layer with strawberries and whipped cream, replace the top, and serve.

Notes

Ensure your butter is chilled for the best texture. Avoid overkneading the dough.
