  • 2 cups cooked rice
  • 1 pound chicken breasts
  • 2 tablespoons olive oil
  • 1 cup corn kernels
  • ½ cup mayonnaise
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 lime
  • â…“ cup cotija cheese
  • ½ cup black beans
  • 2 tablespoons cilantro
  • Salt to taste
  • Pepper to taste

Instructions

  1. Combine olive oil, chili powder, smoked paprika, garlic powder, lime zest, salt, and pepper. Add chicken and toss.
  2. Heat a skillet over medium-high heat. Cook chicken until golden and internal temperature is 165°F, about 6–7 minutes per side.
  3. Add corn kernels and cook until lightly charred, about 4 minutes. Stir in mayonnaise and lime juice.
  4. Warm black beans in a small pan until heated through.
  5. Divide rice among bowls and top with black beans, sliced chicken, and corn mixture.
  6. Sprinkle cotija cheese and cilantro over each bowl and serve with lime wedges.

Notes
