Delicious blueberry muffins topped with a crunchy streusel, perfect for breakfast or a snack.

  • 1 cup fresh blueberries
  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 large egg
  • ½ cup milk
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup brown sugar
  • ¼ cup cold butter
  • ¼ cup rolled oats
  • ½ teaspoon cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Mix together the flour, granulated sugar, baking powder, and salt in a bowl.
  3. Whisk together the egg, milk, vegetable oil, and vanilla extract until smooth in another bowl.
  4. Combine the wet ingredients with the dry ingredients until just mixed, then gently fold in the blueberries.
  5. Mix the brown sugar, flour, oats, cold butter, and cinnamon to create the streusel topping.
  6. Fill the muffin cups with the batter and sprinkle the streusel topping generously over each muffin.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool in the tin for a few minutes before transferring to a wire rack.

Notes

Store leftover muffins in an airtight container at room temperature for up to three days. They can be frozen for up to three months.
