Warm and cheesy stuffed bell peppers, filled with a savory mixture of ground meat, rice, and Italian seasoning, baked to perfection.

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 lb ground beef or turkey
  • 1 can diced tomatoes
  • 1 cup shredded cheese
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off of the bell peppers and remove the seeds.
  3. In a skillet, cook the diced onion and minced garlic until softened.
  4. Add the ground beef or turkey into the skillet, cooking until browned.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper.
  6. Stuff the mixture into each bell pepper and place them in a baking dish.
  7. Top each stuffed pepper with shredded cheese.
  8. Cover the dish with foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 10 minutes, until the peppers are tender and the cheese is bubbly.

Notes

For a healthier twist, you can substitute ground turkey for beef or quinoa for rice. To prevent soggy peppers, ensure all seeds are removed.
