A delightful cheesecake featuring juicy peaches and a mix of fresh summer berries, perfect for warm days and gatherings.

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup fresh peaches, sliced
  • 1 cup mixed summer berries (strawberries, blueberries, raspberries)
  • Optional: mint leaves for garnish

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a bowl, combine graham cracker crumbs and melted butter until fully mixed. Press the mixture firmly into the bottom of a springform pan to form the crust.
  3. In another bowl, beat together the cream cheese, sugar, and vanilla extract until smooth.
  4. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  5. Pour the cream cheese mixture over the crust in the springform pan and smooth the top.
  6. Layer the sliced peaches and mixed berries on top.
  7. Refrigerate the cheesecake for at least 240 minutes or until set.
  8. Garnish with mint leaves if desired before serving.
