A comforting casserole combining ground beef, creamy soup, and layers of potatoes and cheese, perfect for family dinners.

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cups shredded cheese (cheddar or your choice)
  • 45 medium potatoes, thinly sliced
  • 1 cup sour cream
  • 1 can cream of mushroom soup
  • Salt and pepper to taste
  • Olive oil (for cooking)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the chopped onion and ground beef in olive oil until browned and translucent; drain excess fat.
  3. Combine the sour cream and cream of mushroom soup in a bowl; season with salt and pepper.
  4. Layer half of the sliced potatoes, followed by half of the beef mixture and half of the cheese in a greased casserole dish; repeat layers.
  5. Pour the sour cream mixture over the top layer.
  6. Bake covered with foil for about 45 minutes, then remove the foil and bake for an additional 15 minutes.
  7. Let the casserole cool slightly before serving.

Notes

Pairs well with a fresh side salad or crusty bread. Keeps in the fridge for up to 3 days and can be frozen for up to 2 months.
