Wholesome sweet potatoes filled with eggs, crispy bacon, and topped with green onions, creating a comforting and delicious breakfast dish.

  • 2 large sweet potatoes
  • 4 large eggs
  • 4 slices of bacon
  • Salt to taste
  • Pepper to taste
  • Chopped green onions (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes under cool water to remove dirt.
  3. Poke holes in the sweet potatoes with a fork.
  4. Bake the sweet potatoes for about 45 minutes, until tender.
  5. Cook the bacon in a skillet until crispy, then crumble it.
  6. Cut the sweet potatoes in half lengthwise and scoop out some flesh to create a boat.
  7. Crack an egg into each sweet potato half.
  8. Season with salt and pepper, then add crumbled bacon on top.
  9. Bake again for 15-20 minutes, until the eggs are set to your liking.
  10. Garnish with chopped green onions before serving.
