Delightful bite-sized treats featuring sweet potatoes topped with creamy Brie, tart cranberries, and crunchy pecans.

Ingredients

  • 2 medium Sweet potatoes
  • 4 oz Brie cheese
  • 1/2 cup Dried cranberries
  • 1/2 cup Pecans, chopped
  • 2 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice sweet potatoes into rounds about 1/4 inch thick.
  3. Toss the sweet potato slices with olive oil, salt, and pepper.
  4. Arrange the slices on a baking sheet and roast for 20-25 minutes.
  5. Remove from oven and top each round with Brie, cranberries, and pecans.
  6. Return to the oven for an additional 5-7 minutes until cheese is melted.
  7. Serve warm as a delightful appetizer.

Notes

Ensure uniform thickness of sweet potato rounds for even cooking. Can be made ahead and topped just before serving.
