  • 1 avocado, sliced

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the diced sweet potatoes with olive oil, chili powder, cumin, salt, and pepper.
  3. Spread the sweet potatoes in a single layer and roast them for about 25-30 minutes.
  4. Warm the corn tortillas in a skillet until pliable.
  5. Fill each tortilla with roasted sweet potatoes, avocado slices, and fresh cilantro.
  6. Serve with lime wedges on the side.

Notes
