Delightful sweet potato tacos with a balance of natural sweetness and spices, perfect for a comforting meal.

Ingredients

  • 2 medium sweet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Corn tortillas
  • Toppings (avocado, cilantro, lime, salsa)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes into bite-sized pieces.
  3. Toss the cubed sweet potatoes with olive oil, cumin, chili powder, salt, and pepper.
  4. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  5. Warm the corn tortillas in a dry skillet over medium heat for a minute on each side.
  6. Fill each tortilla with the roasted sweet potatoes and add your favorite toppings.

Notes

Store leftover sweet potatoes in the fridge for up to three days. Reheat separately from tortillas.
