Delightful fritters showcasing the bright, tangy flavor of rhubarb, crispy on the outside and fluffy on the inside.

Ingredients

  • 1 cup rhubarb, chopped
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Oil for frying
  • Powdered sugar for dusting

Instructions

  1. Combine chopped rhubarb and sugar, and let sit for about 10 minutes.
  2. Whisk together milk, egg, and vanilla extract until smooth.
  3. Mix the flour, baking powder, and salt in another bowl.
  4. Combine wet ingredients with dry ingredients, stirring until just combined.
  5. Fold in the rhubarb mixture gently.
  6. Heat oil in a deep fryer or large pot to 350°F (175°C).
  7. Drop spoonfuls of batter into the hot oil; fry until golden brown, about 3-4 minutes per side.
  8. Drain on paper towels and dust with powdered sugar before serving.
