Ingredients

Scale
  • 1/2 cup mayonnaise
  • 2 tbsp pickled jalapeño juice
  • 2 tbsp minced pickled jalapeños
  • 1 tsp sugar
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cumin
  • Optional: a dash of hot sauce
  • 2 large flour tortillas
  • 1 cup shredded Mexican blend cheese (or Monterey Jack + Cheddar)
  • 1/2 cup cooked chicken, shredded or chopped (or steak)
  • Butter or oil for the skillet

Instructions

  1. Prepare the Creamy Jalapeño Sauce: In a bowl, mix together all the ingredients for the Creamy Jalapeño Sauce until well combined. Set this delicious sauce aside.
  2. Heat the Skillet: Heat a skillet over medium heat and add a dab of butter or a splash of oil.
  3. Assemble the Quesadilla: Place one tortilla in the skillet, then sprinkle half of the cheese evenly over the surface.
  4. Add the Protein and Sauce: Add cooked chicken or steak on top of the cheese, and drizzle with the creamy jalapeño sauce.
  5. Finish with Cheese and Another Tortilla: Top with the remaining cheese, then place the second tortilla on top.
  6. Cook the First Side: Cook for about 3-4 minutes, or until the bottom tortilla is golden and crispy.
  7. Flip and Cook the Other Side: Carefully flip the quesadilla and cook the other side for an additional 3-4 minutes.
  8. Slice and Serve: Once both sides are golden and the cheese has melted, remove the quesadilla from the skillet and let it cool slightly before slicing into wedges.
