A warm and hearty Taco Casserole layered with flavorful ingredients, perfect for family dinners.

Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 cup salsa
  • 3 cups tortilla chips, crushed
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef in a skillet over medium heat until well-cooked. Drain excess fat.
  3. Mix in the black beans, corn, taco seasoning, and salsa, and let it simmer for 5 minutes.
  4. Layer half of the crushed tortilla chips in a baking dish, followed by the beef mixture and half of the cheese.
  5. Create another layer with the remaining tortilla chips, the rest of the beef mixture, and top with the remaining cheese.
  6. Bake for 20-25 minutes until bubbly and cheese is melted.
  7. Garnish with sour cream and green onions before serving.

Notes

For a lighter version, use ground turkey or chicken. To make it vegetarian, substitute beef with beans or lentils.
