A vibrant and flavorful dish combining chicken, fresh pineapple, and aromatic spices, finished with creamy coconut milk.

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup fresh pineapple chunks
  • 1 cup mixed vegetables (such as bell peppers, carrots, and peas)
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons red curry paste
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 2 cups jasmine rice
  • Fresh Thai basil for garnish

Instructions

  1. Cook the Jasmine Rice: In a pot, cook jasmine rice according to package instructions. Set aside when done.
  2. Sauté the Chicken: In a large skillet, heat a bit of oil over medium heat. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  3. Cook the Vegetables: Add mixed vegetables to the skillet and cook for another 3-4 minutes.
  4. Combine the Ingredients: Stir in pineapple chunks, coconut milk, red curry paste, fish sauce, and sugar. Allow to simmer for 5-10 minutes until the sauce thickens.
  5. Serve and Garnish: Serve the curry over jasmine rice and garnish with fresh Thai basil.

Notes

Use fresh pineapple for maximum sweetness. Adjust curry paste for spice preference.
